Corey Simon was born March 2, 1977, in Pompano Beach, Florida. He spent four seasons at Florida State, won a national title in the 1999 season, and finished as a consensus All-American whose 44 career tackles for loss tied a school record. Philadelphia drafted him sixth overall in 2000. He started all 16 games as a rookie with 9.5 sacks and made the PFWA All-Rookie Team, and Madden NFL 2001 rated him 84 for that season.
Simon added 7.5 sacks and four forced fumbles in 2001. He had 7.5 sacks again in 2003 and was selected to the only Pro Bowl of his career, the season Madden NFL 04 rated him 95. He started in four NFC Championship games for the Eagles. Philadelphia franchise-tagged him in February 2005. He declined to sign, and the tag was lifted.
He signed with Indianapolis and started 13 games in 2005; Madden NFL 06 rated him 94 for that year. Surgery put him on the physically unable to perform list in 2006, and he did not play. The Colts terminated his contract in August 2007 and Tennessee signed him weeks later. On October 25, 2007, Simon retired because of polyarthritis. He was elected to the Florida Senate in 2022 and re-elected in 2024.
