After high school, Ellis joined Missouri State.

In 2018 as a freshman Ellis saw action in 4 games and played a total of 85 snaps at linebacker for the Bears. He recorded 12 tackles, one assist, while adding 7 stops.

As a sophomore for the Bears in 2019 Ellis played in 7 games and took part in 321 snaps for the Bears. He recorded 14 tackles, 7 assists, while adding 11 stops. As a pass rusher, he chalked up 7 total pressures, and 4 QB hurries, one QB hit, and 2 sacks during the year.

In 2020 as a junior Ellis played in 9 games and contributed on 489 snaps. He recorded 17 tackles, 9 assists while making 17 stops. As a pass rusher, he produced 21 total pressures, which included 11 QB hurries, 3 QB hits, and 7 sacks on the year.

Scouting Report: Strengths
  • Ellis has an excellent feel for working off blockers and knowing how and when to counter as the play goes on.
  • He’s very good with his hands, a technician with the violence, quickness, and the long arms to ward off blockers. He has a great motor and enough creativity to make plays late in the down as a pass rusher.
  • His fluidity and speed allow him to cover a lot of ground when dropping back into zone, and Ellis is capable of turning and running with tight ends.
  • He has prototypical size, with a little more room on his frame to add weight. He shows impressive quickness at the snap and plays at a good pad level.
  • His closing burst is outstanding, and he routinely finished plays last year. He has range and toughness as a run defender, capable of dropping anchor to set the edge and showing the acceleration to chase down the backside in pursuit.
  • Ellis wins with all-out hustle, second and third effort and will contribute in the NFL.
Scouting Report: Weaknesses
  • Never out of a play, but can get out of control and work himself away from the action.
  • Ellis plays with poor anchor strength and too often fails to set the edge against bigger linemen.
  • While Ellis moves well laterally, he doesn’t always get there in pursuit.
